Ingredients:
This soup is nutrient-dense and delicious! Bruce and Mindy Mylrea with One Day to Wellness, inspired me to try Soy Curls. When Amazon delivered the Soy Curls, I pondered over what to make with them. With the weather quickly getting colder, I decided to create a warm hearty soup with the Soy Curls. The Soy Curls taste similar to Chicken….I promise!
- 1 Bag Soy Curls (or 2-3 chicken breasts for non-soy curl lovers)
- 2 Cups Northern White Beans
- 1 Container Sliced Organic Mini Bella Mushrooms
- 1 Container Sliced Organic White Mushrooms
- 1 Bunch of Organic Swiss Chard or Kale, chopped
- 1 Bag of Organic Celery, diced
- 32 ounces Organic Low Sodium Vegetable Broth
- 1 Garlic Clove, diced (optional)
- 1 Small Yellow Onion, diced (optional)
- 1 Tbsp. Fresh Oregano, chopped
- 2 Tbsp. Fresh Italian Parsley, chopped
- 4 Diced Roma Tomatoes or 1 Can of Stewed Tomatoes
*If you don’t like mushrooms, add an alternate vegetable(s). Diced Carrots, Green Beans, etc..
Directions:
Place Soy Curls in water for 10 minutes to hydrate. Drain and set aside.
Saute diced celery, onion, garlic, fresh oregano, fresh parsley, mushrooms, and Soy Curls in ½ cup vegetable broth for 5-10 minutes until soft.
Add tomatoes and stir for 2 minutes.
Add Vegetable Broth and Beans.
Simmer for 30 minutes on medium-low.
Add Swiss Chard or Kale on top and cover for 2-3 minutes…just until the leaves wilt.
Stir and enjoy!
