Shrimp Fajitas with Lime Slaw

“Family Favorite”
Ingredients:
- ½ tsp. Salt
- ½ tsp. Paprika
- ¼ tsp. Cumin
- ½ tsp. Oregano
- ½ tsp. Ground Pepper
- ½ tsp. Chili Powder
- 1 diced Red Pepper
- 1 lb. large peeled & deveined Shrimp
- 1-2 Tbsp. Canola Oil
- 1-2 Tbsp. Butter or Plant-Based Spread
- Corn Tortillas
- Sour Cream or Plain Almond Milk Yogurt
- Lime Slices
- Fresh Jalapeno Slices, if desired
- 1 bag of Lime Slaw (Fiesta) with lime dressing
Directions:
1- Combine the Spices.
2- Toss the Shrimp in Spices.
3- Heat the Oil and Butter in a large thick skillet.
4- Cook the Shrimp in the skillet.
5- Heat the Tortillas in a non-stick pan on the stove with butter & oil.
6- Remove the shrimp into a metal bowl and cover.
7- Cook the diced red pepper in the pan used for shrimp. Add 1-2 tbsp. water if needed to deglaze the pan.
8- Combine the Red Pepper with the Shrimp and serve on top of tortilla with slaw and sour cream. Squeeze lime on top of the shrimp mixture.
